MAMA'S BREAD PUDDING W APPLES

Morning folks!

May you have a pleasant day ahead of you :)

Let me share a new modified recipe of my mother's bread and butter pudding.

It is my favourite dessert of all time.

Served with whipped cream it adds the yumyumyum.

The baking of this pudding is impromptu, and we had limited resources.

In the end, the result is still umph.

MAMA'S BREAD PUDDING W APPLES
(LEVEL OF DIFFICULTY: 1/5)


Before baking


Voila!

INGREDIENTS

2 green apples
100 grams + 100 grams softened butter
2 tbsp sugar
1/4 tsp ground cinnamon
2 french loaves ( I used a whole pack of Masimo [green] bread
1/4 cup seedless raisins
2 eggs
1/2 cup caster sugar
2 tsp vanilla essence
a pinch of nutmeg
2 cups of Gooday fresh milk

For serving: whipped cream

METHOD

1. Peel+core+cut the apples into small cubes. Melt 100g of butter in heavy skillet. Add apples, sprinkle some sugar and cinnamon. Saute over medium heat for about 10 mins. Stir frequently.

2. Remove the crusts from bread. Grease 2,1/2-quart baking dish w 100g of remaining butter.

3. Combine; bread+apples+raisins+pan juices into the baking dish.

4. In another bowl, (I used blender) whisk (I blended) eggs, milk, sugar, vanilla essence and nutmeg. Pour over the bread and apples. Let the baking dish 'rest' in the fridge overnight.

5. Bake the pudding using water bath method. That is, place the baking dish on a shallow pan filled with warm water / tap water (~2.5 cm high). Bake 180 degree celcius (360 F) for 1 and 1/2 hours to 2 hours.

##Serve your warm delicious pudding with whipped cream.

Even after few days, the pudding is very delicious, soft, moist! Definitely a keeper recipe.

WHAT SCHOOL TAUGHT ME IN 11 YEARS.

Bonne nuit everyone. Tonight I'm just reminiscing over my school days.
What was school like to you?
Did you changed for the better- or worse?
Did you wish you didn't go to school?
Did you have favorite teachers and some despicable friends?
That makes the two of us.

I had schooling at public schools, both of them situated pretty near to my house. I guess you can say that school was pretty awesome, but there were times that weren't. I've been through my highest and lowest during my schooldays- and I've had friends as back up; and friends that stab my back. In a nutshell, school was cool though it took some tears out of me, to be frank.

My childhood memories are pretty vague, and not what you can call solid evidence if tried in court. No way we are talking about History or Add Math, God forbid. These are the top five things that summed up the 'life lessons' (School Version) that I've picked up along the way.

 5 THINGS I LEARNED IN SCHOOL

1. Making fun of yourself is okay. In fact, it's one of the best way to loose up under the study marathon. I remembered when I used to be ashamed and blushed when I answered a question wrong. You are human. Simple mistakes are OK.

2. Be careful who you are friends with. Friendships are worth fighting for. Along the way you are to encounter people from all walks of life. I had someone worth calling a best friend for 4 years. The best four years of school life. Thank you, mon ami. 
"Friends listen to your bad days and times. BEST FRIENDS live it with you,"
3. Academic isn't everything. Sports isn't everthing. Socializing isn't everything. Everything is the perfect balanced of every facets that come with being a student. You need academic, sport, socialising and everything else.

4. Respect. You need to respect to be respected. No matter to the juniors, teachers, not so smart kids and even the janitor. Throw out that sense of biased. You are a student fgs.

5. Serious. You need to learn when to be serious. When Mid Term is around the corner, because your parents will have the report cards, when you are taking a big exam on that year, or when the cafeteria decided to raise up the price on food and beverages. That's no joke.

School was pretty fun, wasn't it? Even I broke into a lab, and I was a prefect for 9 years. Go on, cringe on the times you made a fool out of yourself, and enjoy the times that YOU made yourself proud. Hopefully no bad dreams tonight.

WHAT TO DO AFTER SPM : 20 Perfect Pleasures

For you SPM 2015 candidates, KUDOS! (Almost) The worst part of your adolescence is over. As a high school grad myself, 3 months of freedom's real good. However, sometimes you just feel bored, and simply do not know what to do besides an outing with your friends. I am going to write 3 posts dedicated on what's after SPM, one under Perfect Pleasures, Money Making and Future Oriented. 


1. Go to a concert. Anyone's. Just pick a time; and start Googling some concerts. Who knows, you might find your new favorite artist. 

2. Write your own music. Pick up the guitar or practice the keyboard. A good artist sometimes can be a good musician too. Go on, future Taylor Swift. 

3. Movie marathon!!! Netflix is on Asia now grin emoticon Google engsub heart emoticon You're welcome.

4. Go for a vacation. Treat yourself. Drink something other than the usuals. Eat something you can't even pronounce. 

5. Boost your stamina, exercise! Cause there's nothing like a good run, eh?

6. Express your inner child- Paint! Draw! You're bad at it? Who's to judge? 

7. Yoga & Pilates & Aerobics heart emoticon

8. Socialize. Through social medias or not, this is a good time to stabilize your network. 

9. Sports. Have something you can't always do because of school activities or homework. Try to take up archery, rock climbing or bungee jumping! 

10. Volunteer! You know when you help someone, and you have that awesome feeling in your heart. Lend a hand at an orphan's home nearby or pay a visit at the old folks home. 

11. Youtube. Yesss thanks to this magic that once got me addicted, learn my friend learn. Youtube, Pinterest and even Tumblr is a great social platform of learning things you do not learn at school.

12. Act. Acting is a lot of fun. The more the drama, the better. You may take small roles to make some extra cash. 

13. Learn how to play chess. Chess, is not only for geniuses. Work your way up. Nothing beats that feeling when you got to say 'Checkmate'.

14. Soul search. What do you want to do in life? What did you do in life? Who do you make a better life lived for? 

15. Learn how to make a new dish! Or a fancy beverage. Who knows, it might come in handy.

16. Learn self defense. This step is so important that I don't know why it is not at the top of the list. You be careful now. 

17. Camp. Camp out with your friends. When's the last time you had that. Going on a trip down the memory lane, now?

18. Overcoming fears. Be fearless. Don't be afraid of the things you shouldn't be afraid of. It's hard, trust me I KNOW, I have some phobias too. Small steps, mon ami. Try to search for people who's dealing with the same problem as you are. Big help there.

19. Makeover. You're out of high school now! It's time to dish out that 10 years old bangs. Try something stylish. Be bold. It's just hair guys, it's just hair. ** But think it through cause you don't wanna cry yourself to sleep tonight yeah

20. Relax. De stress. It makes a big difference for your body. And it SHOWS on your face. 
There you have it! 20 stuffs you can do for the next few months. Tell me what's YOUR plans. Don't worry if you are indecisive on what to do. Relax! It's YOUR time! You have approximately less than 3 months to enjoy before you start worrying on the exam results. Let the bygones bygones. You did your best. SPM is not the end of the world. Take it from someone's who has been there. It's all up to Allah; so pray hard.

MAMA'S PERFECT AYAM MASAK MERAH

Assalam and hi everyone.

MAMA'S PERFECT AYAM MASAK MERAH

PS: Sorry if I made the tomatoes as the highlight, I really need the benefits of tomato rn. :)



What's SO SPECIAL that momma's Ayam Masak Merah became my favourite food of all times?

  1. It's the perfect balance between spicy and sweet
  2. The sauce is thick, not like the ones you usually found at restaurants
  3. The chicken is fried first with salt and turmeric so it taste differently. Different good that is.
  4. It's so good it makes you want to eat all of it at once.
  5. There's is NO FOOD ADDITIVE but it will got you addicted. Serious.
  6. You will feel like eating it everyday for the rest of your life.

Since Ayam Masak Merah, is common among the Malays, I shall write the recipe and steps in Bahasa Melayu. If you do not understand, please, Google Translate is at your convenience.

Bahan

1. 1/2 ekor ayam, dilumur garam & kunyit.
2. 1/2 mangkuk kecil sos cili -- I use Kimball! :)
3. 25 tangkai cili kering -- potong, masak atas api kecil, and kisar
4. 2 sb gula & a pinch of salt
5. 1+1/2 sk garam
6. 1 biji bawang besar 
7. 2 ulas bawang putih 
8. 4 cm halia

Cara

1. Goreng ayam separuh masak. Ketepikan
2. Tumis bahan kisar (3 bahan yang digariskan) dengan api perlahan sehingga cili benar benar garing & pecah minyak.
3. Masukkan cili sos, garam, gula. Masukkan sedikit air. Kacau rata dan masak seketika. 
4. Masukkan ayam yang telah digoreng.
5. Kacau rata sehingga ayam masak dan kuah pecah mink. 
*This is the tricky part, because it's takes quite a long time. Feel free to do chores around the kitchen as you wait, but be sure you don't burn the chicken.

D'accord, you are finished! I'm sure I don't have to tell you that this Malaysia's dish can be served with pulut kuning, or nasi tomato, or nasi lemak.

My goodness, this made my mouth waters! As for me, I can eat this delicious scrumptious straight down from Heaven dish all by itself! Sort of like a snack, at a controlled amount. :P Thanks mama it's super delicious <3

MAMA'S SICILIAN ORANGE CAKE RECIPE

Afternoon, Earthlings!

Well, let's get down to it, shall we?

So, Sicilian Orange Cake. 


LEVEL OF DIFFICULTY : (2/5)




Here's a little bit info about the cake.

The Sicilian cake called cassata is arguably the most famous sweet of Sicily. Cassata is today a complex cake of layered liqueur-soaked genoise interspersed with sweetened ricotta cheese, fruit preserves and jellies surrounded by marzipan and decorated with Baroque garnishes and flourishes of marzipan fruits, rosettes, flowers, and curlicues. Cassata probably originated as a simple egg, sugar, and ricotta cheese cake,

This cake got me hooked even after so many times of baking.



SOC distinct characteristics:
  1. REALLY REALLY Soft
  2. THE PERFECT LEVEL of Sweetness
  3. Addictive

PERFECT FOR TEA, PERFECT FOR GUESTS and absolutely 
the PERFECT GUILTY PLEASURE <3

THIS IS MY MAMA'S RECIPE. 
KUDOS TO HER FOR THE SOFTEST, FLUFFIEST, LIGHTEST CAKE. 


INGREDIENTS

FOR THE CAKE:
  1. 250 g of salted butter
  2. 200g of caster sugar
  3. 2 teaspoons of grated orange zest
  4. 4 medium sized eggs
  5. 250 g of self-raising flour
  6. 85 ml of freshly squeezed orange juice



FOR THE ICING
  1. 125g of icing sugar
  2. 5 teaspoon of freshly squeezed orange juice
THE SIMPLE STEPS
  1. Preheat that faithful oven, up to 170 degree celsius. That's 443.15 K, peeps.
  2. Grease the pan and place non stick baking pan sheet.  (I use bundt pan- so pretty! Lightly butter it up and sprinkle limited amount of flour. Pat the bundt pan over the sink to remove excess flour)
  3. Beat 250 g of salted butter and caster sugar until pale. That should be around 4~5 minutes. Beat the eggs into the mixture ONE BY ONE NOT ALL 4 OF THEM AT ONCE

    Beat the mixture until it is fluffier than a bunny

  4. Add grated orange zest and pour all of the flour into the mixing bowl.

5. Pour the freshly squeezed juice. 
6. Mixed lightly using the spatula.
7. Pour the mixture into your pan! Knock the pan lightly a few times on the kitchen table to make sure the mixture is evenly distributed at all parts of the pan.

8. Bake the cake for 170 degree celsius for 40 - 50 minutes. It only takes 40 minutes for me. But ohh well, one to each own.

As you eagerly wait for Sicilian Orange Cake that now has filled your kitchen with mouth-watering aroma, let's do the icing.

  1. Pour 125g of sieved sugar into a bowl.
  2. Add 5 tsp of orange juice.
  3. Voila! You done. My icing is not very thick so it is not that obvious in pictures (the way I love it because it is sweet already for me and I have sweet tooth)

ONE AFTERNOON IN MARCH

Good morning, assalamualaikum.

My first post in the blogging world is finally out.

As I intend to keep this blog anonymous as possible, let me tell you what you can know about me.

Though no one may read this. -.-'

I am 18, and yup waiting for my UPU results. Alhamdullilah my SPM came out 19 days ago,

and I am very grateful with the results. Now, I'm wishing so that I can enrol in University Malaya,

PASUM. It is said that only the straight As student get there. Fingers crossed! I'm also learning

French language, at Alliance Francaise, Bangsar. I am still mastering the art of driving which I

dislike.

Which leads me to a troubling question. If I were to be a PASUM student, it is UM's regulation

that the students whether walk or bike around their provided residences.

Walking : too much sun which leads to sunburn and heatstroke

Cycling : I don't know how. -.-''

But, ooh well, don't cross a bridge before you come to it, right?

I am supposed to be studying for my next French class (the last one in this term!) Wish me luck on the petit mock test yeah! Next term starts 9 April 2016.

I am new to this blogging thing, so if you are reading this, do (follow? Subscribe?)

I promise to write some better stuff in the next post.
