Let me share a new modified recipe of my mother's bread and butter pudding.
It is my favourite dessert of all time.
Served with whipped cream it adds the yumyumyum.
The baking of this pudding is impromptu, and we had limited resources.
In the end, the result is still umph.
MAMA'S BREAD PUDDING W APPLES
INGREDIENTS2 green apples
100 grams + 100 grams softened butter
2 tbsp sugar
1/4 tsp ground cinnamon
2 french loaves ( I used a whole pack of Masimo [green] bread
1/4 cup seedless raisins
2 eggs
1/2 cup caster sugar
2 tsp vanilla essence
a pinch of nutmeg
2 cups of Gooday fresh milk
For serving: whipped cream
METHOD
1. Peel+core+cut the apples into small cubes. Melt 100g of butter in heavy skillet. Add apples, sprinkle some sugar and cinnamon. Saute over medium heat for about 10 mins. Stir frequently.
2. Remove the crusts from bread. Grease 2,1/2-quart baking dish w 100g of remaining butter.
3. Combine; bread+apples+raisins+pan juices into the baking dish.
4. In another bowl, (I used blender) whisk (I blended) eggs, milk, sugar, vanilla essence and nutmeg. Pour over the bread and apples. Let the baking dish 'rest' in the fridge overnight.
5. Bake the pudding using water bath method. That is, place the baking dish on a shallow pan filled with warm water / tap water (~2.5 cm high). Bake 180 degree celcius (360 F) for 1 and 1/2 hours to 2 hours.
##Serve your warm delicious pudding with whipped cream.
Even after few days, the pudding is very delicious, soft, moist! Definitely a keeper recipe.
